I live in Hawaii and it gets pretty darn hot here in the summers. Especially in my non-air conditioned house. I&#039;ve brewed a few beers (ales included) during the hot days where I&#039;ve only been able to keep the temp at a min of 76˚ during the day. During the nights I could get the temperature lower. The higher temperature did effect the flavor of the beer slightly, but I&#039;ve not had one that wasn&#039;t drinkable. Some quite tasty actually, even though it is not what was intended. Fermentation temperature is something I battle constantly. I&#039;m about to start a recipe for Märzen and I&#039;m going to use the &quot;swetting&quot; method of placing the carboy in a shallow pool of water and draping a towel or old t-shirt over it (with the end sitting in the water). I&#039;m hoping this will give me low enough temperatures. Good luck and happy brewing.

		<description>Great Method!! I use this myself and found that it eliminates the extra equipment and the extra time for sparging while still maintaining excellent efficiency. To hold temp, I found that taking the pot off the stove and placing on my kitchen table (with towel underneath the pot if the wife complains?) wrapping a heavy fleece blanket around the pot works great. At most I lose a 1/2 a degree over an hour period! A lot easier then constantly checking and reheating as i used to do myself in the past. Great blog man. Keep it up.</description>
